PB & C


Peanut butter and Chocolate. I don't know why people say "we go together like peanut butter and jelly" when the more obvious and, let's just say it, more delicious combo is peanut butter and chocolate! I know I'm not alone in thinking this is a magical combination forged in the shining light of a rainbow and......I'm getting ridiculous. Nevertheless, I will say that I have always loved peanut butter bars and I love that they are quick to make! And there's no baking so these are the perfect treat to make during summertime but substantial enough to hold up to cold weather. I don't know why, but I always think of hardier cookies and treats during the winter, as if I'm going west in a wagon train.

 I decided to make these to bring in to the girls at work and you know what? They didn't mind at all! :)  (I think I even got a woo hoo from one of the providers! (I work at a doctors office.))
As far as the recipe goes, it is one I've had written down in a notebook for awhile, but I suspect I found it on Allrecipes. Does anyone else do that? I have tons of recipes jotted down and I have no clue where they came from! I started to just print them straight from the source and make sure the address is on the paper somewhere, now I have a gigantic binder filled with papers and magazine rip outs....I should organize that....someday.

Peanut Butter Bars
(Adapted (probably) from Allrecipes)

Ingredients
1 cup butter or margarine, melted

2 cups graham cracker crumbs

2 cups confectioners' sugar

1 cup peanut butter

1 1/2 cups semisweet chocolate chips

4 tablespoons peanut butter

Directions


In a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9x13 inch pan.

In a metal bowl over simmering water, or in the microwave (this is what I did and it was super easy), melt the chocolate chips with the peanut butter, stirring occasionally until smooth. Pour over the prepared crust and use a spatula to spread it out. Refrigerate for at least one hour before cutting into squares.
